Banana Bread


Ok, so this was incredibly simple, but it was my first gluten free bread.
I made the banana bread recipe that is on the package of the Bob's Red Mill Gluten Free All Purpose Baking Flour.

1/3 cup canola oil (I used coconut)
2/3 cup packed brown sugar
2 eggs
1 tsp vanilla
1 3/4 cup gluten free all purpose baking flour
2 tsp baking powder
1 tsp cinnamon
1 tsp xanthan gum
1/2 tsp salt
1 1/2 cup mashed bananas

The recipe also adds a 1/2 cup of both walnuts and raisins, which I did not include.

Makes one loaf. Grease loaf pan. Bake at 350 for 1 hour.

Mardi Gras




This year for Mardi Gras we really didn't do much, but I did make a batch of cookies. This time I made GF chocolate chip cookies with almond flour. These cookies are amazing!!!

GF Chocolate Chip Cookies

2 1/2 cups almond flour
1/4 t sea salt
1/4 t baking soda
1/2 cup butter, melted
1 T vanilla extract
1/2 cup agave nectar
1 cup dark chocolate pieces

Bake 350 for 7-10 minutes.

Valentine's Day




This Valentine's Day we did not go out and I did not try to make the most romantic food possible. Instead, I decided to show my love by making a meal that would simply make my husband happy. We had salt and pepper fries, veggie burgers and celery. I made the Sunshine burgers (because they are GF and delicious) and I had mine without a bun. To drink, we had Italian Blood Orange Soda. Finally, for dessert, I made a mocha mousse (not pictured).

Dinner tonight was tuna steak (marinated over night), broccoli (fresh and steamed), and rice (a trader joe's blend with added seasoning).

Tuna steak marinate:

1/4 cup orange juice
1/4 cup soy sauce (GF)
2 T olive oil
1 T lemon juice
2T parsley
1 clove garlic
1/2 t oregano
1/2 t black pepper

My first cookies- Coconut raisin cookies





Today I made my first gluten-free cookies since deciding to cut the gluten out of my diet.

They are delicious.

Recipe:
1/4 cup coconut oil (melted)
1/2 cup agave
1 tsp vanilla
1/2 cup coconut flour
1/2 cup almond flour
1/4 tsp salt
1/4 tsp baking soda
1/2 cup shredded coconut
1/4 cup raisins

Bake at 350 for 10 minutes.
